Summer Macaroni Pasta


Oh, no! Have I really devoured all of this pasta salad?! How could this be? I just made it, right? Well, it is so delicious, and I have been eating it for every meal... so perhaps this is a keeper recipe. Yes. For certain. Hurry, let's take a picture before I inhale the last few bites!


Oooooo.... WAIT! I bought some extra ingredients the last time I was wandering the aisles of our grocery store! I could make yet ANOTHER double batch of this gloriousness-in-a-bowl. Let me turn off the television right now and hie to the kitchen! 


BWAHAHA! I AM THE CHAAAAAMPION, my frieeeeeend! And I didn't even have to turn on the oven, further heating up this hot hot house! Just the ticket for a sweaty summer evening. 

Now, here's how you can be as obsessed with a salad like I am. (original recipe here. I basically just double it, because really; You should) I'm guessing you could probably drop anything you happen to have in your fridge in this. I'm thinking about tossing some diced chicken bits for some protein, school lunch season IS just around the corner! 

2 cups small pasta
2 cups tiny broccoli florets
1 cup diced cucumber
1 cup diced red bell pepper
1/2 cup finely chopped green onion
1/2 to 1 cup sliced black olives

Dressing:
1 cup mayonnaise
4 tea white wine vinegar (or regular in a pinch) 
1 tea salt
1 tea pepper
1 tea sugar

Boil the pasta until just cooked, toss the broccoli in for 30 seconds, then drain. Mix up the dressing, and coat all the veggies & pasta. Refrigerate overnight for best results. Stir to redistribute dressing, and serve.

Alfredo Cauliflower Sauce

I'm sure everyone has seen this cauliflower alfredo sauce on Pinterest. I was dying to try it as my son seems to dislike tomato based sauces, and geez! Who can pass up a vegetable stuffed meal? Especially with how much I like to make pasta for the kids. (easy dinner!)

The first attempt was kind of a failure. It was tasty, yet a bit spicy and SUPER GARLICKY. The kids found it to be too spicy, and I couldn't blame them. They seemed to like it though? Like in theory it was good? So I'm going to be tweaking the recipe a bit to allow for young tastebuds.



4 large cloves garlic, minced
2 tablespoons butter
5-6 cups cauliflower florets
6-7 cups vegetable broth or water
1 teaspoon salt 
1/4 teaspoon pepper (to taste)
1/2 cup milk 
INSTRUCTIONS
Garlic: Saute the minced garlic with the butter in a large nonstick skillet over low heat. Cook for several minutes or until the garlic is soft and fragrant but not browned (browned or burnt garlic will taste bitter). Remove from heat and set aside.
Cauliflower: Bring the water or vegetable broth to a boil in a large pot. Add the cauliflower and cook, covered, for 7-10 minutes or until cauliflower is fork tender. Do not drain.
Puree: Use a slotted spoon to transfer the cauliflower pieces to the blender. Add 1 cup vegetable broth or cooking liquid, sauteed garlic/butter, salt, pepper, and milk. Blend or puree for several minutes until the sauce is very smooth, adding more broth or milk depending on how thick you want the sauce. You may have to do this in batches depending on the size of your blender. Serve hot! If the sauce starts to look dry, add a few drops of water, milk, or olive oil.

Rice & Bean Bake

Well this has become a dinnertime staple. This would be super easy as well if I did not insist on making brown rice the hard way. (not the instant, because I've become inexplicably weird about instant rice) Making real rice is a real pain in my... well you can guess.

But still.

This is a really delicious dish, and if the recipe gets lost on the internet before I post it up here, I would be enormously screwed. I put this all into My Fitness pal, and two servings (I must have seconds on this!) is not that bad- like under 400 calories.




Rice & Bean Bake

2 chicken breasts- diced (I think this is optional! Easier without!)
4 c. cooked rice
3/4 c. frozen corn
15 oz. can black beans
1 c. sour cream
1/2 c. salsa
4 oz. diced green chiles w/ fluid
1 c. shredded cheese
maybe some cilantro if you have it for a garnish?

Preheat oven to 350F. In a large bowl, combine all ingredients except for cilantro and mix thoroughly to combine. Make sure the yogurt and cheese are stirred in throughout the entire bowl. Season with salt and pepper if desired. Transfer to an oven-safe dish and top with extra cheese if you would like. Bake for 20-25 minutes, or until heated through. Garnish with chopped cilantro.

Spicy Veggie Pasta

This is another one that I just ignore the chicken bits on, too. I hate dealing with meat. Plus when I made this specific recipe, the chicken was all gross anyway. The sauce was not too spicy for the kids, and I added a couple extra sprinkles of red pepper flakes on my bowl and it was excellent.




Veggies & Pasta
16 oz. of Whole Wheat Penne Pasta (cooked) 
tbsp. olive oil, divided
2 Boneless Skinless Chicken Breasts, cut in 1″ cubes (optional)
¼ tsp. salt
¼ tsp. pepper
½ c. Onion, diced
2 cloves Garlic, minced
1 Yellow Bell Pepper, long thin slices 
c. Broccoli florets
c. Asparagus, chopped in 1″ pieces
c. Grape tomatoes
Cook your pasta and let it drain.  (tip: I always add a bit of olive oil to my pasta water during cooking so the noodles don’t stick together). Sprinkle the chicken breast with salt and pepper. Heat 1 tbsp. oil in a skillet over medium heat and cook chicken until done and golden on all sides. Remove and let rest in a large bowl.
Add the remaining olive oil and begin sauteing the onions for 2 min. Add in the garlic and bell pepper and saute another 2 mins. Then toss in any other woody veggies  (broccoli, asparagus) saving the tomatoes until the very end.
When everything is cooked, combine the veggies with the chicken in your big bowl. 
Spicy Cream Sauce
tbsp. butter
tbsp. flour 
c. half & half
1/4 tsp. of red pepper flakes
c. Parmesan cheese- shredded
In the same pan you cooked the chicken and veggies in, melt the butter over medium heat. Toss in the flour and stir, cooking 1-2 minutes.  
Slowly add in the half and half while stirring to prevent any clumps from forming.  Sprinkle in the red pepper flakes and allow to simmer until you see boiling action.  Stir periodically.
When your sauce begins to thicken and bubble, turn off the heat and add in your cheese. Stir until melty
To assemble everything I like to add the pasta first so it gets nice and coated with sauce and then pour the rest of the veggies in. 

Lime Taco Salad

Making your own salad dressing is kind of a pain, gets a lot of things messy, but man! Is it worth it!



I did not bother with the chicken, and did not miss it. So it's great as a vegetarian lunch salad.


  • Vinaigrette:
  • 1/4 cup chopped seeded tomato
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons olive oil
  • 1 tablespoon cider vinegar
  • 1 teaspoon grated lime rind
  • 1 tablespoon fresh lime juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon black pepper
  • garlic clove, peeled
Salad:
  • 8 cups thinly sliced iceberg lettuce
  • 1 1/2 cups chopped ready-to-eat roasted skinned, boned chicken breast- about 2 breasts (optional)
  • 1 cup chopped tomato
  • 1 cup chopped green bell pepper
  • 1 cup finely diced red onion
  • 1/2 cup (2 ounces) shredded reduced-fat sharp cheddar cheese
  • (15-ounce) can black beans, rinsed and drained
  • 4 cups fat-free baked tortilla chips (about 4 ounces)
  1. To prepare vinaigrette, combine first 11 ingredients in a blender or food processor; process until smooth.
  2. To prepare salad, combine lettuce and remaining ingredients except chips in a large bowl. Add vinaigrette; toss well to coat. Serve with chips.

Black Bean Quesadillas

Yes, ok! I like black beans! So obviously I had to try this, and it was easy enough, plus the kids ate it without much mess.




  • 1 15-ounce can black beans, rinsed
  • 1/2 cup shredded Monterey Jack cheese- I could only find a white "mexican style" shredded cheese bag, it worked just fine
  • 1/2 cup prepared fresh salsa, divided- I used whatever was on sale
  • 4 8-inch whole-wheat tortillas
  • 2 teaspoons canola oil, divided
  • 1 ripe avocado, diced (I can never pick a good one, so I skipped this- totally optional)

  • Combine beans, cheese and 1/4 cup salsa in a medium bowl. Place tortillas on a work surface. Spread 1/2 cup filling on half of each tortilla. Fold tortillas in half, pressing gently to flatten.

  • Heat 1 teaspoon oil in a large nonstick skillet over medium heat. Add 2 quesadillas and cook, turning once, until golden on both sides, 2 to 4 minutes total. Transfer to a cutting board and tent with foil to keep warm. Repeat with the remaining 1 teaspoon oil and quesadillas. Serve the quesadillas with avocado and the remaining salsa.

    Cheaters Enchiladas

    Five ingredients, ten minutes prep time and twenty minutes to cook - now that's what I call cheating, since it tastes good and takes little time.

    1 16 oz. container sour cream
    12 oz. shredded Monterrey Jack cheese
    1 20 oz. can green enchilada sauce
    18 6 inch corn tortillas
    1 2 oz. can chopped black olives

    Preheat oven to 350 degrees. In a small bowl, combine the sour cream and 3/4 of the cheese. Into a 9x13 inch pan, pour a small amount of enchilada sauce to coat bottom of pan. Layer 6 tortillas on bottom of pan. Layer half of the cheese-sour cream mixture and 1/3 of the olives over the tortillas. Repeat this layer once more. Pour the remaining enchilada sauce over the final layer of tortillas. Bake for 20 minutes. Cut into squares and serve.

    Note: some variations add a layer of shredded chicken or beef, perhaps seasoned with some lime and cilantro.

    Ravioli Lasagna

    I love this recipe because it has directions if you freeze it!

    26-oz jar marinara or pasta sauce
    Two 13-oz packages cheese ravioli
    1 1/2 cups shredded part-skim mozzarella cheese

    1. Spread 1/2 cup marinara sauce in the bottom of a foil baking pan. Spread 1 package of ravioli in a single layer on sauce. Top with 1 cup of sauce and 1/2 cup mozzarella. Layer the second package of ravioli on top, then 1 cup sauce and 1 cup mozzarella. Cover pan with foil and freeze until ready to use, or bake covered at 400 degrees for 30 minutes, then uncovered for 5 to 10 minutes.

    To bake frozen lasagna: Preheat oven to 400 degrees. Bake, covered, for 1 hour. Remove foil and continue baking until cheese is melted and starting to brown, and inside middle is hot, about 25 minutes more.

    Black Bean & Corn Tacos

    I don't know about you- but I've just about had it with browning beef. So here's an easier alternative!
    • 2 (15 ounce) cans black beans, rinsed and drained
    • 1/2 cup chipotle Salsa (or just regular salsa)
    • 2 tablespoons lime juice
    • 2 tablespoons minced fresh cilantro
    • 1 (16 ounce) package frozen corn, thawed and drained
    • 1 1/2 cups shredded Pepper Jack Cheese
    • 12 (6 inch) flour tortillas
    • 1 (1/2 pound) firm-ripe avocado (optional)
    1. Preheat oven to 400 degrees F.
    2. Spoon beans into a shallow 2- to 3-quart casserole. Stir in salsa, 1 tablespoon of the lime juice, and cilantro. Top bean mixture with corn, then sprinkle with cheese.
    3. Bake beans and corn in a 400 degree F oven until hot throughout and cheese is melted and bubbling, about 15 minutes. Meanwhile, stack tortillas and wrap in foil. Place in the oven until tortillas are warm, about 5 minutes.
    4. While bean mixture and tortillas heat, peel and pit avocado. Cut into thin wedges and arrange wedges on a small serving plate. Sprinkle avocado with remaining lime juice.
    5. To eat tacos, spoon bean and corn mixture into warm tortillas. Offer avocado wedges and additional salsa to add to taste.
